Healthy Spring Salad with Dandelions

This easy-to-make delicious and nutritious spring salad with dandelions is healthy natural snack for all family, it is also keto, vegetarian and vegan (with olive oil) friendly.
Dandelions are highly nutritious plants, rich in vitamins, minerals and fibre and have health benefits from their root to sunny flowers.

Dandelion flowers and leaves can be eaten cooked or raw for the immunity support because of their excellent source of vitamins A, C and K. They also contain vitamin E, folate and some amounts of B vitamins.

As well, some scientific researches found that dandelion greens and flowers  provide a huge amount of several minerals, including iron, calcium, magnesium and potassium etc.
Also, dandelion contain high levels of the antioxidant beta-carotenes, that help to provide strong protection against cellular damage and oxidative stress.

That’s why it’s worth to try some dishes with dandelions. (if no allergy)

Ingredients:
• 3 Fresh cucumbers
• 15-20 Green soy beans
• Fresh lettuce
• 5-7 Fresh dandelions
• Fresh parsley, coriander
• 1 lemon juice
• Your favourite spices
• Natural grass fed yogurt or sour cream (no sugar added) or olive oil if you like

Mix the washed ingredients in the proportion you like and add olive oil or grass fed yogurt or sour cream.

Dandelions are considered safe and useful for human health.However, some people can have an allergic reaction touching or eating dandelions.
