Vegetable Salad with Nettle

The plant of stinging nettle has been used in herbal medicine from ancient times. Why? Since it contains a lot of vitamins and nutrients such as vitamins A, C and K, as well as several B vitamins; minerals: Calcium, iron, magnesium, phosphorus, potassium and sodium and fats: Linoleic acid, linolenic acid, palmitic acid, stearic acid and oleic acid.
Nettle leaves can be either cooked or eaten raw as a nutritious sauce of vitamins. Also, nettles are often used in soup or as a steamed or wilted vegetable. Since it has a similar flavor and texture, cooked nettle can be used as a substitute for spinach.

How to make Vegetable Salad with Nettle? – Stupid simple 🙂
Ingredients:
• Nettle
• 1 Squash (better choose small with small soft seeds)
• 3 Cucumbers
• Cabbage
• Parsley
• 1 lemon juice
• Natural yogurt (no sugar added) or olive oil

To avoid itchy taste you can quickly pour boiling water over the nettle.
Carefully wash vegetables and herbs.
If you love more the taste of steamed squash, steam the squash for 3-5 minutes, as for me I prefer fresh
Slice the prepared vegetables, nettle and other herbs.
Add 1 lemon juice
Fill the bowl with sliced vegetables and herbs with olive oil or yogurt if you like
